The role

The successful applicant will be only the 4th incumbent in this role in our 24th year as we’ve enjoyed great success and longevity from only 3 previous Managers.

Reporting directly to the Directors – Kate Fairlie and Stephen McLaughlin, you will have autonomy to run the restaurant and Front of House Team. Your key areas of responsibility are;

· To manage and oversee all front-of-house operations, ensuring exceptional, memorable and efficient service.

· Oversee financial aspects, including sales reporting, budgeting, cost control, and profitability.

· Inspire, mentor, train and lead the service team to build on established standards.

· Co-ordinate and manage in tandem with our Head Sommelier an exceptional wine program, including stock control, profitability, beverage offering and training.

· Work closely with the Kitchen team to hone a seamless dining experience, embracing a ‘one team’ mentality.

· Lead from the Front, be hands on

We open for dinner only and work a straight shift over a five day working week (four days 3pm start, one day 5.45pm start). We offer an attractive salary, and an equitable share of gratuities (and a meal on duty). We are less than one hour away from cosmopolitan Edinburgh and vibrant Glasgow and some of the most breath-taking countryside in Britain is on our doorstep.
